I love braising a big batch of English short ribs in herbs, tomatoes, and wine, then turning the resulting broth and fork tender meat into a big batch of beef lentil soup, served with a dollop of Greek-style yogurt and a garnish of fresh dill. I never get tired of it and it’s a satisfying meal on a cold winter evening.
